Austin, TX Weekend

This past weekend could not have been any better.  It was the perfect blend of plans and no plans at all.  A roadtrip to Austin for a gorgeous spring weekend filled with ice cream, yummy food, giggling, great conversation, kayaks, sunburns, coffee jitters, sunshine, hugs and that overall feeling of being happy to be alive.

My friend Evan flew in from Phoenix on Friday afternoon and we made the short 3.5 hour drive to the ATX.  I {love} a good roadtrip.  Especially when it’s with somebody who makes you laugh and can carry on a good conversation.  Not the forced conversation full of uncomfortable silences but the genuine kind that comes from liking the company of the one you’re with.

We spent most of our time with Carli and John.  I adore this couple beyond words.  It’s such a pleasure being in their presence.  I’m in a constant state of giggling when I’m around Carli.  Thankfully neither Evan or John seemed to mind.  They talked about manly things while Carli and I skipped about, catching up on life.  We all went kayaking on Saturday afternoon.  I had never been before but it was so much fun.  Of course, I’m sunburnt from my nose to my knees to my elbows…so worth it.  Yes, I had on spf 50 and I still came back pink as can be.  Carli brought her iPhone onto their kayak to sneak a few photos.  Brave girl, that one. 

Afterwards, we explored South Congress stopping first to have Amy’s Ice Cream.  My choice?  Mexican vanilla with nutter butter, of course.  So good.  I need it…right now.  We also spent a little time in Uncommon Objects.  They have the coolest collection of antiques and vintage treasures.  It’s like stepping into Wonderland.

Yep, a great weekend indeed.  I’m thankful for good friends, sunshine and pretty music.  And for kayaks.  Oh yea, and for peanut butter and avacados.  Not together….that’s just weird.

Photo Walk = New Friends

I’m not sure if you’ve heard of the latest social media craze that is Instagram…but it’s awesome.  Basically, it’s like twitter but with photographs and no restrictions on how many characters you can use.  I’ve been using it since Thanksgiving and have met some of the neatest people, including Carli and many others.  Lately there have been photo walks/meet ups happening all over the world with IG users living near each other.  Yesterday, I went with a friend to the Dallas IG meet up.  It was an afternoon spent with fellow picture takers and a chance to finally meet people face-to-face who I’ve been following for a while. 

**Yes, it’s safe.  Yes, we met in a public place. Yes, I took a friend with me.  No need to worry.  Always be super careful and don’t be silly in these situations.  Now, that’s enough about that.**

You would think that an afternoon spent with people who share a love of their iPhones would have looked  like this…

But it turned out to be a wonderful time taking pictures and swapping stories with eight new friends.  We met at Starbucks then headed to Dolly Python, my favorite vintage store in Dallas.

We ended the evening at Elbow Room, sharing pizza and learning more about who we were as people…not just those who had the same iPhone app.  I’m learning that humans are generally better in real life.  It was a pleasant surprise.  New friends and a story.  I liked it.

Oh, hey everybody!  I’ve been absent just a teensy weensy bit.  But I’m back now!! At least until I head off to Portland, OR in 8 days! Oh man…I cannot wait!!

So on to what this post is about….BOOTS!  I’ve been quite smitten with pretty boots for as long as I can remember.  Nope, it’s not because I’m a Texan it’s because they’re awesome and look cute with everything.  Seriously.  Plus, I’m not a dressy high heels kind of girl so boots are perfect dress up/dress down material and they’re so comfortable. 

Here’s a little photo of my newest pair from UO.  I’m in love with them and in love with my employee discount.  Tired of hearing about it yet?  Nope?  Well then….awesome.

RIP 2010

It seems that New Years Eve will usually come and go and your expectations are never met.  However, this year I had no expectations at all and I have to say that I had the best-time-ever.  The majority of my time was spent catching up with my very best friend from college (Jamie) and with my newest dear friend (Carli).  Alright…I know why you’re here.

I had the most amazing time just laughing and talking and spending time with two of my favorite people on the planet.  Good friends are worth more than anything. I’m thankful Jamie and Carli are mine. I hope your holiday was faaaaaantastic!! I’m off to unpack now. My place is CA-RAZY!!!

halloween + pretty dresses

This year, Halloween meant an opportunity to wear my all time favorite vintage dress. I found a 1970’s maxi dress in almost perfect condition at Dolly Python.  It was only $5….bonus!  It had a few holes that I had to stitch up before wearing but that was more fun than annoying. 

We had the opportunity to wear our costumes to work on the Friday before Halloween.  My friend Richard and I ran outside to take a few pics during the work day.  I was so hyper from the high amount of candy intake and needed an excuse to be outside.  Hooray for cameras, work breaks and good friends.

It really was a gorgeous fall afternoon.  I think I could dress like this every day.  I’m sure there are some more pics roaming around of the entire dress.  I love it so.  For the rest of the weekend, I added a peace sign head band, fake marijuana plant (duh) and John Lennon glasses.  Now to find the pictures.  Happy Halloween it was.  I’m bummed it’s over.  But not too bummed because THANKSGIVING and CHRISTMAS are around the corner!  Ohh yea.

I’d say the three places mentioned above made my Monday off close to perfect.

Pearl Cup is a trendy little coffee shop off of Henderson/Knox and I’ve loved it every time I go.  The owners are super chill and laid back plus they like to talk…and anybody that enjoys conversation wins my affection immediately.  The only thing that drives me  slightly crazy is the early closing time.  I really wish there was a coffee shop that was open 24 hours around here.  Maybe I’ll find it one day.  Anyways, the coffee and food are tasty and the atmosphere is relaxed and chill.  Here’s a shot at the inside of Pearl Cup:

On to shopping…oh how I love shopping (a bit too much).  Right next to Pearl Cup you will find the raddest store in Dallas – We Are 1976.

I could browse this quirky little store for hours and want everything in it.  Yes, it’s a tad on the pricey side but most everything is made by local artists and there are tons of handmade goodies waiting to be yours.  Here are some of my favorites:

I’ll take one of each, please!! After We Are 1976 I ran (well drove) over to Lula B’s for some antique and vintage shopping.  Ok I LOVE this place and cannot believe it took me so long to figure out it even existed.  Here are some shots from my iPhone.   I found so much great swag and their hours of operation are simply fantastic.  Not to mention it was so organized!!

I had to bring something home.  I found a huge afghan for $35 and some adorable 60’s cups for $5 each.  Again, a little pricey but they were all in perfect condition.

If you’re in Dallas (and haven’t already) you gotta visit these places because they’re super fun but will also steal your money.

Taco Salad with Honey Lime Dressing//Baked Bree

Today was the day I began my weekly attempt at cooking.  Now, let’s remember that I don’t make things…hardly ever.  This is why I started out with something easy, yummy, and delicious! This recipe is from Baked Bree, an adorable cooking blog.  I get an email from her every day with a new yummy treat and great pictures.  Subscribe now!  You totally should.  I love it because her recipes are easy enough for people like me and delicious enough for the foodies out there. 

So here goes:

Honey Lime Dressing:

*1/4 cup honey
juice of 3 limes (I only used 2)
2 Tablespoons white vinegar
1 Tablespoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil

*of course (blast!), I didn’t have honey at my house so I improvised with this! The honey packet on the side of my greek yogurt.   Guess what?  It totally worked.

Put everything into a bowl, except the olive oil, and whisk that baby until it’s pretty and smooth.  After these have been whisked, pour the olive oil slowly into the bowl and whisk until smooth.  You should taste it now because it’s yummy!

Now for the good stuff!

For the salad:

1 head of lettuce (I used a few cups of pre-packaged organic baby lettuce instead)
3 green onions, cut up
1 red bell pepper, diced
half of a red onion (I left this off because well, I was tired of cutting things and wanted to eat faster)
2 ears grilled corn (I used 1/2 can of corn, rinsed and drained)
half of a bunch of cilantro (I skipped this too, ew)
tomatoes
1/2 sliced avacado (I added this, mmmm yummy)
grilled chicken, seasoned to taste
1/2 cup shredded cheese
tortilla chips, crushed (I didn’t use these either)
black beans – find Bree’s yummy and quick bean recipe here

Put everything but the chips and black beans into a bowl.

Struggle with the avacado.  How does one prepare these things?

Toss the salad.  Add the dressing, little by little.

Then add the beans on top (and chips, if you’re into that sort of thing).

Eat up, buttercup!  This salad is one tasty creation.  I was pleasantly surprised and ate an entire mixing bowl myself.  I’ll share next time.  I hope your Sunday is just swell!! I’m going to attempt Mango Sticky Rice next.  Mainly because I can’t stop thinking about it.  Hooray for food!! It’s truly one of my favorite things.
