I love the holidays for pretty much all of the reasons that everybody else does.  This time of year makes me entirely happy to be alive.  It also makes me love the Internet.  There are so many delightful things out there just waiting to be tried!! It’s Work Related…

I’m hard at work in beautiful Spokane, WA all weekend.  It’s beyond gorgeous here. Not only that but there’s homemade cookies and other goodies all over the place!!

Busted.

The lovely Jenn made cookies that taste like clouds from heaven so I had to have all of them.  Back to work for me!  OHHH, I forgot to mention that we’re staying at the coolest hotel EVER!! Check it…The Davenport Hotel.

Pumpkin spice latte?  Psh, yea right.  For some reason I cannot get into this drink.  It makes me gag, for real.  I’ve always felt completely left out when everybody talked about their love of ushering in fall with a Starbucks Pumpkin Spice Latte.  So I created my own autumn drink that’s perfection and doesn’t make me cringe.  Next time you’re at Starbucks, give this a try.  It’s basically the taste combination of cool October weather and love at first sight.

Prepare yourselves…

Peach Cobbler

Is there any dessert more perfect than peach cobbler?  Made from amazingly delicious ripe peaches right out of the tree?  Wait, do peaches grow on trees?  Or do they come off of some shrub thing?  Well, from that observation you know I didn’t pick them myself but got a few from Whole Foods.  Just as good, right?

So…..I’ve been following Joy The Baker’s blog and I LOVE IT!  She’s so clever, witty and adorable.  Plus, that girl can cook and take the prettiest photos.  I decided to make her Peach Cobbler for One recipe tonight.  Whoa…..it still has me in a state of food euphoria SO I had to share.

Cupcake Overload!

My friend Nicole gave me a HUGE cupcake cake pan for my birthday.  Suh-weet!  Her words – ‘The older you get the bigger the cupcake.’  I couldn’t agree more.

Last night, I hung out with my other friend Nicole (yea, it’s easy to get confused) and we gave this magical cake pan a whirl.  We used the recipe found on the back and BAM….an hour or so later we produced the yummiest hugest cupcake ever.  VICTORY!!

Soooo we brought it to work today because everybody knows bringing sweets to the office automatically makes you class favorite. Mmmmmm…..smurf blue and lookin’ mighty fine.

Austin, TX Weekend

This past weekend could not have been any better.  It was the perfect blend of plans and no plans at all.  A roadtrip to Austin for a gorgeous spring weekend filled with ice cream, yummy food, giggling, great conversation, kayaks, sunburns, coffee jitters, sunshine, hugs and that overall feeling of being happy to be alive.

My friend Evan flew in from Phoenix on Friday afternoon and we made the short 3.5 hour drive to the ATX.  I {love} a good roadtrip.  Especially when it’s with somebody who makes you laugh and can carry on a good conversation.  Not the forced conversation full of uncomfortable silences but the genuine kind that comes from liking the company of the one you’re with.

We spent most of our time with Carli and John.  I adore this couple beyond words.  It’s such a pleasure being in their presence.  I’m in a constant state of giggling when I’m around Carli.  Thankfully neither Evan or John seemed to mind.  They talked about manly things while Carli and I skipped about, catching up on life.  We all went kayaking on Saturday afternoon.  I had never been before but it was so much fun.  Of course, I’m sunburnt from my nose to my knees to my elbows…so worth it.  Yes, I had on spf 50 and I still came back pink as can be.  Carli brought her iPhone onto their kayak to sneak a few photos.  Brave girl, that one. 

Afterwards, we explored South Congress stopping first to have Amy’s Ice Cream.  My choice?  Mexican vanilla with nutter butter, of course.  So good.  I need it…right now.  We also spent a little time in Uncommon Objects.  They have the coolest collection of antiques and vintage treasures.  It’s like stepping into Wonderland.

Yep, a great weekend indeed.  I’m thankful for good friends, sunshine and pretty music.  And for kayaks.  Oh yea, and for peanut butter and avacados.  Not together….that’s just weird.

It’s strange how much I dislike waking up in the morning but how much I love breakfast food.  Brunch is my favorite meal of the day.  Probably because I have to put forth a lot of effort in the morning to have a decent meal.  It takes a miracle to get me out of bed by brunch time.  But when I do….

…I’m in heaven!

Having breakfast at any time of the day works for me.  I actually prefer it.  In fact, I may try these strawberry muffins for lunch this weekend.  I know I won’t be awake in time to consider it brunch.

 Lately I’ve been crushing on all things feather related.  Why are they just so pretty? From paintings to jewelry to cookies to music…I love it all.  Here are some of my favorites feathers at this EXACT MOMENT!! It’s exciting, yes?

Hot Chocolate Chip Cookies

I promised a couple of friends some cookies but wasn’t sure which kind to make. It seems that I’m always making some type of sugary treat because it’s so fun and even better when you give them away.  Ok so I totally snagged a few before sending them off because they were DELICIOUS! Naturally, I wanted to share them with you!

Hot Chocolate Triple Chocolate Chip Cookies (found here)

Ingredients:
– 2 sticks salted butter/ at room temperature
– 1 cup white granulated sugar
– 2/3 cups packed light brown sugar
– 2 whole large eggs
– 1 teaspoon pure vanilla (my favorite PART)
– 3 1/4 cups all-purpose flour
-4 packages (1 oz. packets, NOT sugar-free) hot chocolate mix
– 1 teaspoon salt
– 1 1/4 teaspoon baking soda
– 1 cup of white chocolate, milk chocolate and semi-sweet chocolate chips

Preparation Instrucions:
Heat oven to 350 degrees.
– Cream butter and sugars until smooth.
– Beat in eggs and vanilla until combined.
– In a separate bowl, combine flour, hot chocolate mix, salt and baking soda.
– Add to wet ingredients in 3 to 4 parts, making sure all is incorporated.
– Fold in chips.
– Chill the dough for an hour or so.
– Use a 1/4 cup as a scoop to scoop dough onto a greased baking sheet.
– Bake for 9-11 minutes or until edges are golden brown.
– Let cool for 5 minutes then EAT THOSE SUCKERS!!!

They’re yummy and chocolatey and delicious PLUS made with hot cocoa. It’s a win win win as far as I’m concerned.  Eat them underneath your Christmas tree because it better still be up!! It’s still cold out!!
